Zucchini Casserole Recipe
This Zucchini Casserole recipe makes 4-6 servings.
What You Need
1 red onion, sliced
1 green pepper, cut in thin strips
4 medium zucchini, sliced, unpeeled
1 16-oz. can diced tomatoes, undrained
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon basil
1 tablespoon oleo
1/4 cup grated Parmesan cheese
What To Do
1. Combine all ingredients, except oleo and cheese, in a slow cooker.
2. Set temperature on low and heat for 3 hours.
3. Dot casserole with oleo and sprinkle with cheese. Cook 1 1/2 hours more on low setting.
