Malaysian Sweet Potatoes Recipe
 
What You Need
• 3 pounds sweet potatoes, peeled, cubed (1 inch)
• 1 1/2 inches fresh ginger, peeled, minced
• 1 large onion, diced
• 1 stalk lemongrass, outer leaves removed, split lengthwise
• 1 tablespoon sesame oil
• 1 1/2 teaspoons tamarind paste
• 1/4 cup rice wine vinegar
• 1/4 cup light soy sauce
• 2 cups orange juice
• Zest of 1 lemon, finely grated
• Pinch of ground red pepper

What To Do
1. Place all ingredients in crockpot, cover, and cook on high until potatoes are tender (approximately 4 1/2 to 5 hours).

2. Remove and discard lemongrass. Remove potatoes and keep warm.

3. Pour liquid from crockpot into saute pan; reduce until thick and syrupy.

4. Pour over potatoes and serve.
