What You Need
2 pounds zucchini
1 small green pepper, chopped
1 small onion, chopped
1 clove garlic, minced
1 teaspoon salt
1/4 teaspoon pepper
4 tomatoes, peeled and chopped
2 tablespoons butter
2 tablespoons minced parsley
What To Do
1. Slice zucchini a quarter-inch thick; add to crockpot along with chopped bell pepper and onion, garlic, salt and pepper.
2. Put chopped tomatoes on top, then butter.
3. Cover; cook on high approximately 2 hours, or until veggies are tender.
4. Sprinkle chopped parsley over top before serving.
