What You Need
1 pound plum tomatoes, chopped
1 eggplant, cut into half-inch pieces
2 medium zucchini, cut into half-inch pieces
1 onion, finely chopped
3 stalks celery, sliced
1/2 cup chopped parsley
2 tablespoons red wine vinegar
1 tablespoons brown sugar
1/4 cup raisins
1/4 cup tomato paste
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
What To Do
1. Combine all ingredients in crockpot.
2. Cover; cook on low 5 1/2 hours without removing cover.
Note: Can be served warm or cold.
