Stuffed Green Peppers Recipe

This Stuffed Green Peppers recipe makes 6 servings. (Hint: Make sure that 6 green peppers will fit inside your crockpot before proceeding!)
What You Need
1 10-oz. package frozen corn kernels
1 15-oz. can red kidney beans, drained, rinsed
1 14.5-oz. can diced tomatoes
1/4 cup salsa
1/4 cup chopped onions
1 1/2 cups cooked rice
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/2 teaspoon pepper
2 cups shredded reduced fat cheddar cheese, divided
6 green peppers
What To Do
1. Remove tops and seeds from green peppers and set aside.
2. Combine all other ingredients except 1/4 cup cheese. Mix, then stuff this mixture into green peppers.
3. Arrange peppers in crockpot. Cover, cook on low 6-8 hours.
4. Sprinkle with 1/4 cup cheese during the last 30 minutes.
