Stuffed Bell Peppers in Crockpot Recipe

This Stuffed Bell Peppers in Crockpot recipe makes 4 servings. To make it even heartier, add a cup of cooked rice to the stuffing.
What You Need
4 large green bell peppers
1 pound ground turkey
2 eggs, slightly beaten
2 cloves garlic, minced
1/3 cup grated Parmesan cheese
1/3 cup finely chopped parsley
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 cup pasta sauce
What To Do
1. Slice tops off peppers and remove cores and seeds. Cut a small hole in bottom of each.
2. In a bowl, combine turkey, eggs, garlic, Parmesan cheese, parsley, salt and pepper. Spoon mixture into each bell pepper (do not pack).
3. Stand pepper upright in slow cooker stoneware.
4. Spoon equal amounts of pasta sauce over each pepper.
5. Cover; cook on low 4-5 hours or until peppers are tender and meat thermometer records 170 degrees.
