Chickpea and Lentil Stew Recipe
This Chickpea and Lentil Stew recipe makes 6 servings.
What You Need
2 tablespoons extra virgin olive oil
1 medium yellow onion, chopped
1 chile pepper (select variety depending on your desire for heat), stemmed, seeded, chopped (add more to taste)
4 cloves garlic, chopped
2 teaspoons garam masala
1/4 cup sesame seeds
2 (15-oz.) cans garbanzo beans, drained, rinsed
1/2 cup dried red lentils
1 (28-oz.) can tomato puree
2 cups vegetable broth
1/4 cup pitted black olives
1/2 cup plain yogurt
What To Do
1. Saute onions in olive oil that is preheated in a skillet.
2. Add peppers, garlic, garam masala and sesame seeds to onions in skillet, cooking until peppers begin to soften.
3. Transfer skillet ingredients plus all other ingredients except for yogurt into crockpot. Cover; cook on low 8-10 hours.
4. Stir in yogurt 15 minutes prior to serving.
