Chicken and Sweet Potato Stew Recipe
What You Need
• 6 bone-in chicken thighs (remove skin and trim fat)
• 2 pound sweet potatoes, peeled, cut into spears
• 1/2 pound white button mushrooms, thinly sliced
• 6 large shallots, peeled, halved
• 4 cloves garlic, peeled
• 1 cups dry white wine
• 2 teaspoons chopped fresh rosemary
• 1 teaspoon salt
• 1/2 teaspoon freshly ground pepper
• 1 1/2 tablespoons white wine vinegar

What To Do
1. Add chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper to a 6-quart slow cooker and stir to combine.

2. Cover; cook on low about 5 hours, until potatoes are tender.

3. Before serving, de-bone chicken thighs and stir in vinegar.
