Crockpot Beef 'N' Brew Vegetable Soup Recipe
 
What You Need
• 3 medium onions, sliced
• 1 pound carrots, sliced half-inch thick
• 4 parsnips, sliced half-inch thick
• 2 bay leaves
• 4 cloves garlic, minced
• 1 tablespoon snipped fresh thyme
• 1/2 teaspoon pepper
• 2 tablespoons quick cooking tapioca
• 1 1/2 pounds beef stew meat, cut into 1-inch cubes
• 1 (14 1/2 oz.) can beef broth
• 1 12-oz. can beer

What To Do
1. In a 5- or 6-quart crockpot, place onions, carrots, parsnips, garlic, bay leaves, dried thyme, and pepper. Sprinkle with tapioca.

2. Place meat on top of vegetables. Add beef broth and beer.

3. Cover; cook on low for 10 to 12 hours or on high for 5 to 6 hours.

4. To serve, remove bay leaves and stir in thyme.
