Hot Roast Beef Sandwiches Recipe

What You Need
2 onions, sliced into quarter-inch thick rings
3 cloves garlic, sliced
3 pounds beef chuck roast, well-trimmed
1 tablespoon soy sauce
1/3 cup fat-free mayonnaise
1 1/2 tablespoons prepared horseradish
10 large slices sourdough bread, toasted, halved
What To Do
1. Place onions and garlic into slow cooker.
2. Season roast with salt and pepper.
3. Spray large skillet with non-stick cooking spray and place on high heat. Add roast to skillet and brown on all sides, then transfer to crockpot on top of onions.
4. Sprinkle roast with soy sauce.
5. Cover; cook on low 5-6 hours or high 3-3.5 hours, until meat is tender. Use an instant-read thermometer to verify center of meat has reached 160 degrees.
6. Combine mayonnaise and horseradish in a bowl.
7. Slice meat thinly, and layer between slices of toast with onions and horseradish spread.
