What You Need
6 strips bacon
2 pounds boneless beef cubes
2 15-oz. cans kidney beans, drained
1 28-oz. can tomatoes, cut up
1 8-oz. can tomato sauce
1 cup finely chopped onion
1/2 cup thinly sliced carrots
1/2 cup finely chopped green pepper
1/2 cup finely chopped celery
2 tablespoons minced parsley
2 cloves garlic minced
1 bay leaf
2 tablespoons chili powder
1 teaspoon salt
1/8 teaspoon pepper
What To Do
1. Fry bacon until crisp. Remove bacon and drain on paper towel.
2. Brown half the beef cubes in pan with bacon drippings for five minutes. Place in crockpot. Repeat with remaining meat.
3. Stir bacon and remaining ingredients into 3 1/2 quart slow cooker.
4. Cover and cook on low setting about 10 hours or until beef is tender. Stir occasionally.
