Crockpot Western Omelet Casserole Recipe

What You Need
32 ounces hash browns, frozen
1 pound ham, extra lean, cooked, cubed
1 medium onion, diced
1 medium green bell pepper, diced
1 1/2 cups shredded Monterey Jack Cheese
12 eggs
1 cup milk
1 teaspoon salt
1 teaspoon black pepper
What To Do
1. Place layer of frozen potatoes on the bottom of crockpot, then layers of (in order) ham, onion, green pepper and cheese.
2. Repeat layers 2-3 times, until ingredients run out, topped with layer of cheese.
3. In a bowl, beat eggs and milk and add salt and pepper. Pour over ingredients in crockpot.
4. Cover; cook on low heat for 10-12 hours.
